  • 200 g White chocolate Used for decoration.
  • as needed Edible eyes For decorating the brownies to resemble spooky ghouls.

Method

Preparation
  1. Preheat your oven to 160ºC Fan / 180ºC / 350F / Gas Mark 4. Grease and line a 9 inch by 12 inch tin with baking parchment.
  2. In a pan over low heat, melt the milk chocolate and butter together, stirring continuously to prevent burning. Once melted, remove from heat to cool slightly.
  3. In a separate bowl, combine the eggs, light brown sugar, and vanilla extract. Use a hand mixer to whisk for about 5 minutes until the mixture is thicker and paler in color.
  4. Incorporate the melted chocolate and butter mixture into the egg mixture, whisking as you go.
  5. Sift in the plain flour, then use a hand whisk to combine until just integrated.
  6. If adding nuts, dried fruit, or chocolate chips, gently fold them in now.
  7. Pour the batter into your prepared tin, spreading it out evenly.
Baking
  1. Bake in the oven for 15-20 minutes. They should be set but still gooey in the center!
  2. Once baked, allow the brownies to cool in the tin before removing and slicing into rectangles.
Decoration
  1. Melt the white chocolate in short bursts in the microwave, using it to attach the edible eyes to the brownies.
  2. Drizzle remaining melted white chocolate over the top for added decoration.

Notes

To determine if your brownies are done, insert a toothpick; it should come out with a few moist crumbs. Allow cooling before cutting for best texture.
