Preparation
- Preheat your oven to 160ºC Fan / 180ºC / 350F / Gas Mark 4. Grease and line a 9 inch by 12 inch tin with baking parchment.
- In a pan over low heat, melt the milk chocolate and butter together, stirring continuously to prevent burning. Once melted, remove from heat to cool slightly.
- In a separate bowl, combine the eggs, light brown sugar, and vanilla extract. Use a hand mixer to whisk for about 5 minutes until the mixture is thicker and paler in color.
- Incorporate the melted chocolate and butter mixture into the egg mixture, whisking as you go.
- Sift in the plain flour, then use a hand whisk to combine until just integrated.
- If adding nuts, dried fruit, or chocolate chips, gently fold them in now.
- Pour the batter into your prepared tin, spreading it out evenly.
Baking
- Bake in the oven for 15-20 minutes. They should be set but still gooey in the center!
- Once baked, allow the brownies to cool in the tin before removing and slicing into rectangles.
Decoration
- Melt the white chocolate in short bursts in the microwave, using it to attach the edible eyes to the brownies.
- Drizzle remaining melted white chocolate over the top for added decoration.
Notes
To determine if your brownies are done, insert a toothpick; it should come out with a few moist crumbs. Allow cooling before cutting for best texture.
