Ingredients

For the Beef
  • 1 pound lean ground beef Substitute with turkey or Morning Star Crumbles for a vegetarian option.
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • to taste cayenne pepper Start with 1/4 teaspoon for a mild kick.
  • 1/2 cup mild salsa
For the Salad
  • 1 large head romaine lettuce, chopped (about 8 cups for a generous serving)
  • 1 1/2 cups cherry tomatoes, halved (or 2 Roma tomatoes, chopped)
  • 1 cup black beans, rinsed and drained
  • 2 ears sweet corn Check notes for tips on how to char them.
  • 1/4 cup chopped red onions
  • 2 avocados, sliced or chopped (for that creamy texture)
  • 1/3 cup roasted and salted sunflower seeds (for crunch)
  • 1/2 cup shredded pepper Jack cheese or sharp cheddar (or more to taste)
  • Tortilla chips or Doritos, slightly crushed (the more, the better for that extra crisp)
For the Dressing
  • to taste Cilantro Lime Dressing Prepare according to your favorite recipe.

Method

Preparation
  1. Prepare the Cilantro Lime Dressing according to your favorite recipe. For the best flavor, chill it for at least one hour before serving.
  2. In a large skillet over medium heat, add the ground beef. Use a spatula to break up any clumps as it cooks, ensuring an even browning. Drain any excess grease after cooking.
  3. Stir in all the seasonings, except for the cayenne pepper. Follow this by adding the 1/2 cup of mild salsa. Let it simmer for 1 to 2 minutes until the mixture thickens and warms through. If you like a bit of heat, add cayenne pepper to your taste.
Assembly
  1. In a large bowl (or individual serving bowls), place the chopped romaine lettuce as the base. Layer with the beef mixture and then add the cherry tomatoes, black beans, charred sweet corn, red onions, and avocado.
  2. Sprinkle the roasted sunflower seeds and shredded cheese on top, followed by the crushed tortilla chips or Doritos for an irresistible crunch.
  3. Finish with a drizzle or toss of your Cilantro Lime Dressing. Serve immediately and enjoy your vibrant feast!

Notes

Chill the dressing a day ahead for enhanced flavor. Char the corn for a smoky flavor, and consider cooking the beef mixture in advance for easier assembly. This Taco Salad works wonderfully as a stand-alone meal or paired with guacamole and salsa.
