Preparation
- Preheat your oven to 350°F (175°C) and spray mini muffin tins with non-stick spray.
- In a large bowl, whisk together the eggs, oil, water, and vanilla until frothy.
- Gradually sprinkle the brownie mix over the wet ingredients, stirring gently until just combined.
- Scoop the batter into the prepared muffin tins, dividing evenly. Bake for 15-20 minutes until a cake tester comes out clean.
- Allow brownies to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Clean and dry strawberries, remove tops, and slice if desired for uniform pieces.
- Cut cooled brownies into bite-sized pieces.
Assembly
- Assemble the skewers by layering strawberries, brownie pieces, and marshmallows in a fun pattern.
- Lay skewers on a wax paper-lined cookie sheet.
- Melt chocolate chips in a glass bowl in the microwave for about two minutes, stirring every 30 seconds until smooth.
- Transfer melted chocolate to a plastic bag, snip off the corner, and drizzle over the kabobs.
- Refrigerate skewers for a few minutes to set the chocolate.
Notes
For extra flavor, add a pinch of salt to the brownie batter or use a mix of different-sized strawberries for a rustic feel. Consider adding banana slices or pineapple chunks for variety.
