Preparation
- In a large pan, add 1/2 tablespoon of butter and the olive oil. Heat on medium-high until it becomes shimmery and lightly foamy.
- Toss in the diced garlic and cherry tomatoes. Cook on medium heat until fragrant and soft, about 4 minutes, stirring occasionally.
- Once the tomatoes are softened, add the fresh baby spinach. Stir continuously until it wilts down, which should take just another 1-2 minutes.
Cooking
- Now, pour in the stock or water along with the fresh spaghetti. Turn the heat all the way up to bring everything together.
- Cook until most of the liquid has cooked off and the spaghetti is al dente.
Finishing Touches
- Finish the dish by adding the remaining butter and grated Parmesan to the pan. Toss everything together.
- To serve, top with additional fresh grated Parmesan and enjoy immediately!
Notes
For extra flavor, consider adding red pepper flakes or a squeeze of fresh lemon juice before serving. Use high-quality Parmesan cheese for best taste. Avoid overcooking the spaghetti for optimal texture.
