Method
Preparation
- Finely chop the parsley stalks, setting the leaves aside for later.
- In a large saucepan, add a generous glug of olive oil over medium heat.
- Grate the garlic directly into the pan, followed by the smoked paprika and parsley stalks. Cook this mixture for about a minute.
Cooking the Stew
- Pour in the chopped tomatoes, butter beans, and vegetable stock into the saucepan.
- Stir well and let the stew simmer gently for 20-25 minutes.
Making Flatbreads
- In a large mixing bowl, combine the self-raising flour, full-fat yoghurt, and 1 tsp of salt.
- Mix until a sticky dough forms.
- Divide the dough into six balls and flatten each into about 1 cm thick rounds.
- Heat a frying pan over high heat and cook each flatbread for 2-4 minutes, flipping when fluffy and golden brown.
- Brush each one lightly with olive oil and season with salt.
Finishing Touches
- Once the stew has simmered, add in the kale and stir until wilted, approximately 3-5 minutes.
- Serve the stew in bowls topped with yoghurt, olive oil, crumbled feta, parsley leaves, and a squeeze of lemon.
Notes
For an extra kick, add a pinch of chili flakes along with the smoked paprika. If butter beans are unavailable, substitute with cannellini or navy beans. Let the stew simmer longer for deeper flavors.
