Ingredients

Main Ingredients
  • 2 pieces sirloin beef steak, 10oz / 300g, 2.5 cm/1 inch thick Use the best quality you can afford.
  • 2 tbsp vegetable oil Separately for cooking.
  • 1 piece red bell pepper (capsicum), deseeded, halved, and sliced into strips Adds sweetness and color.
  • Salt and pepper To taste.
  • 1 cup Pesto Preferably homemade for best flavor.
  • 4 pieces Flatbreads Try serving with Easy Soft Flatbread.

Method

Preparation
  1. Bring the steaks to room temperature for about 30 minutes.
  2. Season the steaks generously with salt and pepper on both sides.
Cooking
  1. Heat 1 tablespoon of vegetable oil in a heavy-based frying pan over high heat until smoking.
  2. Cook the seasoned steaks in the hot frying pan for about 2 minutes per side for medium-rare.
  3. After cooking, remove the steaks, cover loosely with aluminum foil, and let them rest for 5 to 10 minutes.
  4. In the same pan, add the remaining tablespoon of vegetable oil and sliced bell peppers. Cook until charred and tender.
Serving
  1. Slice the rested steaks if desired and serve topped with sautéed bell peppers and a generous spoonful of pesto, with warm flatbreads on the side.

Notes

For richer flavors, marinate the steak in olive oil, crushed garlic, and herbs for a couple of hours. Use a meat thermometer to check for doneness. Consider adding Parmesan or pine nuts to the pesto, or a splash of balsamic vinegar when cooking the peppers for added flavor.
