Ingredients
Method
Preparation
- Bring the steaks to room temperature for about 30 minutes.
- Season the steaks generously with salt and pepper on both sides.
Cooking
- Heat 1 tablespoon of vegetable oil in a heavy-based frying pan over high heat until smoking.
- Cook the seasoned steaks in the hot frying pan for about 2 minutes per side for medium-rare.
- After cooking, remove the steaks, cover loosely with aluminum foil, and let them rest for 5 to 10 minutes.
- In the same pan, add the remaining tablespoon of vegetable oil and sliced bell peppers. Cook until charred and tender.
Serving
- Slice the rested steaks if desired and serve topped with sautéed bell peppers and a generous spoonful of pesto, with warm flatbreads on the side.
Notes
For richer flavors, marinate the steak in olive oil, crushed garlic, and herbs for a couple of hours. Use a meat thermometer to check for doneness. Consider adding Parmesan or pine nuts to the pesto, or a splash of balsamic vinegar when cooking the peppers for added flavor.
