Ingredients

For the Garlic Herb Butter

  • 1 1/2 tablespoons chopped flat-leaf parsley Fresh and aromatic, parsley adds a vibrant green color and a hint of earthiness.
  • 1 large garlic clove, peeled and minced Garlic brings an irresistible aroma that works beautifully with the fish.
  • 2 teaspoons minced shallots Slightly sweet and mild, shallots elevate the flavor profile of the sauce.
  • 1/2 teaspoon Dijon mustard This tangy ingredient ties all the flavors together smoothly.
  • 1 1/2 tablespoons minced prosciutto Adds a savory depth without overwhelming the dish.
  • 2 tablespoons freshly squeezed lemon juice Juicy and zesty, lemon juice brightens the flavor of the dish.
  • Salt, to taste Enhances the overall flavor of the fish and sauce.
  • Freshly ground pepper, to taste A touch of pepper adds warmth and complexity.
For the Tilapia
  • 1 tablespoon canola oil Ensures a non-stick cooking surface and aids in browning the fish.
  • 4 (5 to 6 ounce) skinless tilapia fillets The star of the show! Tender and flaky, tilapia absorbs flavors beautifully.
  • Lemon wedges for serving A fresh squeeze before eating adds a delightful zing.

Method

Preparation
  1. In a mixing bowl, combine the softened butter with chopped parsley, minced garlic, shallots, Dijon mustard, prosciutto, and lemon juice. Season the mixture with a pinch of salt and pepper, and stir until evenly blended. Set aside for later.
Cooking the Tilapia
  1. Heat the canola oil in a large non-stick skillet over medium-high heat. While the oil is heating, season the tilapia fillets generously with salt and freshly ground pepper.
  2. Once the oil is shimmering, carefully place the fish fillets top side down into the skillet.
  3. Cook the fillets for about 4 minutes; you want the underside to turn a beautiful deep golden brown and the fish to be almost cooked through.
  4. Gently turn the fillets over using a small offset spatula. Evenly divide the prepared garlic herb butter mixture over each fillet.
  5. Continue cooking for an additional 1 to 2 minutes, or until the fish is fully cooked and the butter has melted beautifully into the fish.
Serving
  1. Transfer the sautéed tilapia onto plates and serve with lemon wedges on the side for an extra burst of brightness.

Notes

To enhance the richness of the garlic herb butter, consider adding a splash of white wine when cooking the garlic and shallots. For added flavor, allow the butter mixture to chill for 30 minutes before using; this will allow the ingredients to meld together beautifully. If you prefer a crispy texture, pat the tilapia dry before seasoning to help achieve a perfect sear.
