Preparation
- In a mixing bowl, combine the softened butter with chopped parsley, minced garlic, shallots, Dijon mustard, prosciutto, and lemon juice. Season the mixture with a pinch of salt and pepper, and stir until evenly blended. Set aside for later.
Cooking the Tilapia
- Heat the canola oil in a large non-stick skillet over medium-high heat. While the oil is heating, season the tilapia fillets generously with salt and freshly ground pepper.
- Once the oil is shimmering, carefully place the fish fillets top side down into the skillet.
- Cook the fillets for about 4 minutes; you want the underside to turn a beautiful deep golden brown and the fish to be almost cooked through.
- Gently turn the fillets over using a small offset spatula. Evenly divide the prepared garlic herb butter mixture over each fillet.
- Continue cooking for an additional 1 to 2 minutes, or until the fish is fully cooked and the butter has melted beautifully into the fish.
Serving
- Transfer the sautéed tilapia onto plates and serve with lemon wedges on the side for an extra burst of brightness.
Notes
To enhance the richness of the garlic herb butter, consider adding a splash of white wine when cooking the garlic and shallots. For added flavor, allow the butter mixture to chill for 30 minutes before using; this will allow the ingredients to meld together beautifully. If you prefer a crispy texture, pat the tilapia dry before seasoning to help achieve a perfect sear.
