Preparation
- Preheat your oven to 350℉. Line two baking sheets with parchment paper and set aside.
- Cream together the butter, brown sugar, and granulated sugar in a stand mixer until light and fluffy, about 2-3 minutes.
- Incorporate the egg and vanilla extract, mixing on low until well blended.
- Add the salt and baking soda, mixing to combine.
- Gradually mix in the flour, being careful not to overmix.
- Fold in the peanut butter chips and reserve ¼ cup of the candy mix for later.
- Use a 2-inch cookie scoop to drop dough onto lined baking sheets, leaving 2 inches between each.
- Press the reserved candy pieces gently on top of each cookie dough ball.
Baking
- Bake the cookies one sheet at a time for 11-13 minutes, or until edges are golden brown.
- Remove from the baking sheet and transfer cookies to a cooling rack to cool completely.
Serving
- Serve and enjoy the delightful crunch combined with the soft, chewy texture.
Notes
For a richer flavor, use dark brown sugar. Allow dough to rest for 30 minutes before baking for enhanced flavor and texture. For softer cookies, remove them a minute or two early.
