Method
Make the Cilantro Lime Ranch Sauce
- In a small bowl, combine the sour cream, 2 teaspoons of dry ranch seasoning, cumin, chopped cilantro, lime juice, and milk. Gradually add milk until you reach the desired consistency. Cover and refrigerate until ready to serve.
Cook the Chicken
- Heat the oil in a large skillet over medium heat. Add the bite-sized chicken pieces and cook while stirring occasionally for about 2 to 3 minutes.
- Sprinkle the remaining ranch seasoning and smoked paprika over the chicken. Stir well to coat evenly.
- Continue cooking for another 6 to 7 minutes, ensuring that the chicken is cooked through and has a beautiful golden color.
- Squeeze half a lime over the cooked chicken and stir in the cilantro. Keep warm by covering the pan.
Toast the Tortillas
- Heat a large nonstick skillet over medium-high heat. Add a tortilla (or two) and toast for about 1 ½ minutes on each side, until they are nicely browned and have a slight crunch. Transfer to a tortilla warmer and repeat until all tortillas are heated.
Assemble Your Tacos
- Take a warm tortilla and fill it generously with the Ranch Chicken. Layer on shreds of lettuce, cheese, diced tomatoes, red onion, and chopped avocado.
- Top it off with a drizzle of the cilantro lime ranch sauce.
Notes
For added depth of flavor, consider marinating the chicken in ranch seasoning and lime juice for a few hours before cooking. If you want a bit of heat, feel free to add sliced jalapeños or a spicy sauce to your tacos. For a heartier meal, serve with Mexican rice or refried beans on the side.
