Pasta and Base Ingredients
  • 400 g Spaghetti Choose a high-quality pasta that will hold the sauce beautifully.
  • 4 Tbsp Extra Virgin Olive Oil The heart of this dish, bringing a fruity and rich aroma.
  • 4 cloves Garlic, Thinly Sliced Adds a fragrant, inviting quality without overpowering the dish.
  • 500 g Cherry Tomatoes, Halved Juicy and bursting with sweetness, these will create a luscious sauce.
  • 1 tsp Dried Chilli Flakes Offers a pleasant heat to balance the sweetness of the tomatoes.
Cheese and Garnish
  • 100 g Pecorino Romano, Freshly Grated Provides a salty, nutty flavor that pairs perfectly with the other ingredients.
  • 1 bunch Basil Aromatic and fresh, these leaves uplift the dish with a garden-fresh taste.
  • Salt & Cracked Black Pepper Essential seasonings to enhance the overall flavor profile.

Method

Preparation
  1. Start by slicing the garlic thinly; this ensures that the oil is infused with its flavor without burning.
  2. Halve the cherry tomatoes to help them release their juices as they cook.
  3. Grate the Pecorino Romano finely, allowing it to melt seamlessly into your sauce.
  4. Tear the basil leaves and set them aside for garnishing later.
Cooking the Pasta
  1. In a large pot, bring water to a rolling boil. Don’t forget to salt generously until it tastes like the sea.
  2. Add the spaghetti and cook until just shy of al dente, reserving about 1 cup of the pasta cooking water before draining.
Preparing the Sauce
  1. While the pasta cooks, heat the extra virgin olive oil in a large skillet over medium heat.
  2. Add the sliced garlic and dried chilli flakes, gently stirring for 30–40 seconds until fragrant, being careful not to let the garlic brown.
  3. Add the halved cherry tomatoes to the skillet and season them with a pinch of salt.
  4. Cook for about 5–6 minutes, stirring frequently and gently pressing them with the back of a spoon to help release their juices.
Combining Ingredients
  1. Once the spaghetti is ready, transfer it directly to the skillet with the tomatoes.
  2. Add a splash of the reserved pasta water, then toss everything together to coat the noodles thoroughly with the sauce.
  3. Remove the skillet from heat and add the Pecorino Romano cheese in stages, tossing well after each addition.
  4. If needed, add more pasta water to adjust the texture to your liking.
Finishing Touches
  1. Scatter the torn basil leaves over the pasta, giving it a final gentle toss.
  2. Adjust seasoning with additional salt and cracked pepper to taste.
  3. Twirl the pasta into serving bowls, drizzle with a touch more extra virgin olive oil, and finish with a light dusting of grated Pecorino Romano.
  4. Serve immediately for the best flavor and freshness.

Notes

Consider using heirloom or vine-ripened tomatoes for an added depth of flavor. For a smoky touch, you can add sun-dried tomatoes to the sauce. This dish is perfect for casual family gatherings or intimate dinners.
