Ingredients

Main Ingredients
  • 1 bag Hashbrowns (Frozen, 32 oz. bag, Thawed and patted dry of excess water) These crispy potato shreds serve as the base, providing texture and heartiness.
  • 1 can Cream of chicken soup (10.5 oz. can) This creamy soup adds depth and richness with its savory notes.
  • 1/2 cup Cream cheese (8 oz. package, Softened at room temperature, Full fat) The creamy element that melts beautifully into the casserole.
  • 3/4 cup Sour cream (Full fat) Adds a tangy flavor and enhances creaminess.
  • 1 tsp Onion powder For a hint of aromatic sweetness that elevates the overall dish.
  • 1 tsp Garlic powder Infuses the casserole with a robust, inviting flavor.
  • Salt and Pepper (To taste) Essential for enhancing and balancing the flavors.
  • 2 cups Cheddar cheese (Shredded, Full fat, Divided) This is the star of the dish—melty, gooey goodness that ties everything together.
  • 1/3 cup Butter (Unsalted, Melted) Provides richness and a golden topping.

Method

Preparation
  1. In a large casserole dish (9x13), mix together the thawed hashbrown potatoes, cream of chicken soup, softened cream cheese, sour cream, onion powder, garlic powder, salt, pepper, and half of the shredded cheddar cheese. Spread the mixture out evenly to ensure even cooking.
  2. Once mixed, sprinkle the remaining cheddar cheese generously on top.
  3. Drizzle the melted butter over the entire casserole—but resist the urge to mix!
  4. Preheat your oven to 350 degrees F and bake the casserole for 35-40 minutes until the cheese is melted and bubbly.
  5. For an extra crunchy cheese topping, turn on the Broil setting and broil for an additional 2-4 minutes.
  6. Allow the casserole to sit for a few minutes before serving.

Notes

You can prep ahead by mixing all ingredients the night before and refrigerating overnight. Add sautéed veggies for extra nutrients. For spice, add red pepper flakes or jalapeños.
