Ingredients

Base Ingredients
  • 1 tablespoon olive oil A rich and smooth oil that serves as the base for sautéing.
  • 1 tablespoon fresh minced garlic This aromatic ingredient infuses the dish with its beloved fragrance and flavor.
  • 1 cup chopped yellow onion Provides a wonderful foundation for any savory dish.
  • 1 package (12 ounce) Aidells® Cajun Andouille Sausage, sliced thinly Juicy and spicy, the sausage is the star here.
  • 2 cups chicken broth Provides a flavorful liquid to cook the pasta.
  • 1 can (10 ounce) diced tomatoes and green chiles, undrained Adds both moisture and a hint of heat.
  • 1/2 cup heavy cream or milk Brings richness to the dish.
  • 8 ounces rotini pasta (or short pasta of your choice) Captures all the sauces and flavors beautifully.
  • to taste Salt and black pepper Essential for balancing and enhancing the flavors.
  • 1 cup shredded sharp cheddar cheese Adds a delightful topping.
  • for garnish Chopped fresh parsley Adds a pop of color and a fresh, herbal note.

Method

Preparation
  1. In a large skillet over medium-high heat, warm the olive oil. The oil should shimmer but not smoke.
  2. Add the minced garlic, chopped onions, and sliced andouille sausage to the pan. Sauté for about three minutes, or until the sausage is lightly browned and the onions have become tender.
  3. Pour in the chicken broth, followed by the undrained diced tomatoes and green chiles. Stir in the heavy cream, then add in the rotini pasta along with salt and black pepper for seasoning.
  4. Bring the mixture to a boil. Once boiling, cover the skillet and reduce the heat to medium-low to maintain a gentle simmer. Let it cook for approximately 15 minutes, or until the pasta is al dente and has absorbed the flavors.
  5. Remove the skillet from heat and fold in half a cup of the shredded cheddar cheese. Top the dish with the remaining cheese and sprinkle fresh chopped parsley for garnish.

Notes

Choose the Right Pasta: While rotini works beautifully, feel free to experiment with other short pasta shapes. Adjust Spice Levels: If your family prefers less heat, opt for mild sausage. Prepare Ahead: This dish can be prepped ahead of time.
