Cheese
  • 1 1/2 cups Piave Vecchio Cheese, shredded Adds nutty richness to the sauce.

Method

Cooking the Pasta
  1. Boil the linguine noodles according to the package directions until al dente. Drain and reserve 1/2 cup of the pasta water.
Sautéing the Mushrooms
  1. Slice the mushrooms into 1/4-inch thick pieces. Sauté them in a pan with 3 tablespoons of butter over medium heat for about 5 minutes until tender and browned.
Making the Cream Sauce
  1. In a separate saucepan, melt the remaining 3 tablespoons of butter over medium heat. Add the heavy cream, half & half, and chopped garlic cloves. Warm the mixture for about 5-6 minutes, stirring occasionally.
Combining Ingredients
  1. In a large mixing bowl, combine the cooked linguine noodles, salt, black pepper, reserved pasta water, and shredded Piave Vecchio cheese. Pour the warmed cream mixture over the noodles, tossing with two spoons until the cheese melts and the sauce thickens.
Serving
  1. Top the pasta with the sautéed mushrooms, drizzle with fresh lemon juice, and garnish with chopped basil leaves. Serve warm and enjoy!

Notes

For a twist, consider adding cooked chicken or shrimp for extra protein. Freshly grated nutmeg can enhance the sauce's flavor. Use high-quality cheese and fresh herbs for the best results.
