For the Chocolate Coating
  • 6 ounces chocolate Regular-sized chocolate chips or any type of chocolate preferred.
  • 1 teaspoon flaky sea salt Optional but enhances flavor when sprinkled on top.

Method

Preparation
  1. In a small bowl, combine the peanut butter and maple syrup (or honey) and stir until smooth and well-blended.
  2. Fill a mini cupcake pan with liners, or arrange mini cupcake liners on a plate.
Melting Chocolate
  1. Melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring in between until completely melted. Alternatively, use a double boiler.
Assembling Cups
  1. Spoon about 1 teaspoon of the melted chocolate into the bottom of each cupcake liner.
  2. Add about ½ teaspoon of the peanut butter mixture in the center of the chocolate.
  3. Top with another teaspoon of melted chocolate to cover the peanut butter completely.
Freezing
  1. Place the tray in the freezer for 5 minutes, then optionally sprinkle flaky sea salt on top.
  2. Freeze until firm, about 25 additional minutes.
Storing
  1. Once firm, enjoy or store in an airtight container. They can be kept at room temperature for up to a week or refrigerated for two months.

Notes

For creamier peanut butter filling, use natural peanut butter that has been stirred. You can customize the chocolate type to your liking or add a layer of crushed nuts on top for extra crunch.
