Ingredients

Main Ingredients
  • 2 pieces boneless, skinless chicken breasts Tender and juicy, these chicken breasts serve as the protein backbone of your meal.
  • 2 pieces red bell peppers Sweet and flavorful, adds a burst of color and crunch.
  • 1 piece avocado Provides creamy texture and healthy fats.
  • 1/2 cup crumbled feta Tangy and salty, enhances the flavor profile.
  • 1 box pearl or Israeli couscous Adds a delightful bite to each spoonful.

Method

Preparation
  1. Preheat your oven to 375°F and line a sheet pan with parchment paper.
  2. Place the chicken breasts on the sheet pan, drizzle with avocado oil, and season with kosher salt, pepper, and garlic powder.
  3. Prepare the red bell peppers by removing seeds and slicing them thinly, then place the slices on the sheet pan with the chicken, drizzle with more avocado oil, and season.
Cooking
  1. Roast the chicken and peppers in the preheated oven for approximately 25 minutes, or until the chicken is no longer pink in the center.
  2. While roasting, cook the couscous following package instructions, using chicken bone broth instead of water.
Assembly
  1. Dice the avocado and toss it with crumbled feta, a touch of avocado oil, and season with salt.
  2. Once the chicken is done, let it rest for a few minutes, then chop into bite-sized pieces.
  3. In individual bowls, layer the couscous, chicken, avocado-feta salad, and roasted bell peppers.
  4. Drizzle with the juices from the roasting chicken before serving.

Notes

For time-saving, use pre-cooked rotisserie chicken. Marinate chicken in lemon juice and herbs for extra flavor. You can add fresh herbs like parsley or cilantro before serving.
