Method
Preparation
- Heat 2 tablespoons of olive oil in a Dutch oven or medium pot over medium heat.
- Add the chopped carrots and onion, and sauté for 4 to 6 minutes until the vegetables begin to soften.
- Stir in the minced garlic, tomato paste, curry powder, grated ginger, kosher salt, and red pepper flakes. Cook for 2 minutes, stirring constantly.
Cooking
- Add the vegetable broth and rinsed lentils to the pot, stirring well.
- Increase the heat to bring to a boil, then cover and reduce the heat to low. Let it simmer for 35 minutes, stirring occasionally.
- After 35 minutes, stir in the coconut milk and increase the heat back to medium. Cook uncovered for an additional 5 minutes, or until the sauce thickens slightly.
Serving
- Serve the curry over bowls of prepared white or brown rice.
- Garnish with fresh mint, lime wedges, and pomegranate seeds if desired.
Notes
For a deeper flavor, consider letting the curry simmer for an additional 10-15 minutes. For a smoother texture, blend the curry using an immersion blender before serving. Feel free to experiment with adding various vegetables like spinach or bell peppers.
