Preparation
- Preheat your oven to 350°F (175°C).
- Grease a 9×9 inch baking pan with butter or non-stick spray.
- Spread the cubed bread evenly across the bottom of your greased pan.
- In a medium-sized bowl, whisk together the eggs, whole milk, melted butter, granulated sugar, lemon zest, vanilla extract, and a pinch of salt until smooth.
- Pour the custard mixture evenly over the bread cubes, ensuring every piece is well-coated. Gently press down with a flat spatula.
- Sprinkle the blueberries evenly on top and allow the mixture to rest for about five minutes.
Baking
- Place the pan in the preheated oven and bake uncovered for 45-50 minutes until the top is set and slightly golden.
- While the pudding cools, whisk together the powdered sugar, lemon juice, vanilla extract, and a splash of milk until smooth.
Serving
- Drizzle the glaze over the cooled bread pudding and serve warm, optionally with ice cream or whipped cream.
Notes
Use a variety of bread for best texture, feel free to adjust sugar for sweetness, and experiment with different glaze flavors.
