Ingredients

For the Salad
  • 1 pound boneless skinless chicken thighs Juicy cuts of chicken are perfect for grilling.
  • 1 teaspoon kosher salt Essential for enhancing natural flavors.
  • 1/2 teaspoon cracked black pepper Adds subtle heat.
  • 5 slices sourdough bread Provides delightful chewiness when grilled.
  • 2 heads romaine lettuce Crisp and refreshing base.
  • 1 cup cherry tomatoes Adds sweetness and brightness.
  • 3 small Persian cucumbers Lends cool crunch.
  • 1 ripe avocado Creamy complement to textures.
  • 1/4 cup freshly grated parmesan cheese For iconic Caesar flavor.
For the Dressing
  • 1/2 cup mayonnaise Provides a silky base.
  • 1 1/2 teaspoons anchovy paste Adds savory depth.
  • 1 tablespoon fresh lemon juice A splash of acidity.
  • 1/2 teaspoon freshly cracked black pepper Seasoning to taste.
  • 1 teaspoon Worcestershire sauce Extra layer of flavor.
  • 1 large clove garlic Minced for aroma.

Method

For the Dressing
  1. In a medium bowl, whisk together the mayonnaise, anchovy paste, fresh lemon juice, black pepper, Worcestershire sauce, and minced garlic until smooth.
  2. Transfer the dressing to a jar and store it in the refrigerator. This can be made up to three days in advance.
For the Salad
  1. Preheat two burners of your grill to medium-high heat.
  2. Pat the boneless chicken thighs dry with paper towels, then season both sides with kosher salt and cracked black pepper.
  3. Brush both sides of the sourdough bread slices with olive oil.
  4. Place the seasoned chicken and oiled bread directly over the burners. Allow them to cook for about 3-4 minutes.
  5. Check the chicken; if it flips easily, it’s ready. If not, allow it to cook for an additional minute.
  6. Flip the bread and cook until golden brown on both sides. Move the bread to an area of the grill that is turned off to keep warm.
  7. Continue cooking the chicken for another 3-4 minutes, or until they reach an internal temperature of 160°F.
  8. Let the cooked chicken rest for at least 10 minutes before slicing.
  9. In a serving bowl, create a base with torn romaine lettuce, followed by halved cherry tomatoes, sliced cucumbers, and avocado.
  10. Sprinkle grated parmesan cheese over the top, then add the grilled chicken and bread pieces.
  11. Drizzle half of the dressing over the salad, tossing gently to coat.

Notes

For the best flavor, allow the chicken to marinate in salt, pepper, and olive oil for at least 30 minutes before cooking. Consider using different types of bread for variation. Alternatively, you can use pre-cooked rotisserie chicken for convenience.
