Preparation
- Slice the bell peppers into strips and chop the onion, scotch bonnet, and garlic. Set aside.
- Season the shrimp with ½ tablespoon of jerk seasoning and let marinate for about 10 minutes.
Cooking
- Bring a large pot of salted water to a boil and cook the penne pasta until al dente, about 8-10 minutes.
- Heat olive oil in a skillet over medium-high heat and cook the seasoned shrimp for 2-3 minutes on each side until pink and opaque.
- In the same skillet, sauté chopped bell peppers and onion for 1-2 minutes, then add scallions, remaining jerk seasoning, salt, and pepper; cook for another minute.
- Deglaze the pan with chicken stock, scraping up any flavorful brown bits.
- Incorporate garlic and cook for another minute before adding double cream, chopped scotch bonnet, paprika, and allspice.
- Stir in Parmesan and blended cheese until smooth; adjust seasoning.
- Add cooked penne to the sauce, mix well, and if needed, add reserved pasta water for desired consistency.
- Return shrimp to the pan, mix gently, and serve immediately.
Notes
Marinate shrimp longer for improved flavor absorption. Adjust spice levels and experiment with cheese options.
