Method

Preparation
  1. Preheat your oven to 425°F and place an empty 10-inch cast iron skillet in the oven to heat.
  2. Melt the butter in the skillet until it starts to brown, approximately 15 minutes.
  3. In a large mixing bowl, combine the flour, cornmeal, sugar, salt, baking powder, and baking soda.
  4. Core and finely chop one jalapeño, slicing the second jalapeño into rounds for garnish.
  5. In another bowl, whisk together the eggs, sour cream, and buttermilk until smooth.
Mixing
  1. Once the butter is browned, remove the skillet from the oven and pour most of it into the egg mixture, leaving about 1 tablespoon in the skillet.
  2. Slowly whisk the hot butter into the egg mixture, then pour this into the dry ingredients.
  3. Gently fold in the grated cheddar and chopped jalapeños.
Baking
  1. Pour the batter into the hot, buttered skillet and smooth out the top. Place jalapeño rounds on top.
  2. Bake for 15-20 minutes or until a skewer comes out clean.
