Preparation
- Preheat your oven to 425°F and place an empty 10-inch cast iron skillet in the oven to heat.
- Melt the butter in the skillet until it starts to brown, approximately 15 minutes.
- In a large mixing bowl, combine the flour, cornmeal, sugar, salt, baking powder, and baking soda.
- Core and finely chop one jalapeño, slicing the second jalapeño into rounds for garnish.
- In another bowl, whisk together the eggs, sour cream, and buttermilk until smooth.
Mixing
- Once the butter is browned, remove the skillet from the oven and pour most of it into the egg mixture, leaving about 1 tablespoon in the skillet.
- Slowly whisk the hot butter into the egg mixture, then pour this into the dry ingredients.
- Gently fold in the grated cheddar and chopped jalapeños.
Baking
- Pour the batter into the hot, buttered skillet and smooth out the top. Place jalapeño rounds on top.
- Bake for 15-20 minutes or until a skewer comes out clean.
Notes
Serve warm with butter and honey. Can experiment with different cheeses or add herbs for flavor.
