Method
Preparation
- Dice the chicken thighs into cubes approximately 2 cm / 4/5 inches wide.
- In a mixing bowl, whisk together honey, Dijon mustard, soy sauce, crushed garlic, sriracha, and salt until the mixture is smooth.
- Transfer 4 tablespoons of the marinade into a small bowl for later basting the cooked skewers.
- Add the chicken cubes to the remaining marinade and coat thoroughly. Set aside to marinate for at least 20 minutes.
- Thread the marinated chicken onto skewers, using about 4 pieces of chicken per skewer.
Cooking
- Heat oil on a BBQ or skillet over medium heat.
- Grill the skewers for about 2 1/2 minutes on one side before turning them over.
- Baste the cooked side with reserved marinade. Cook for another 2 1/2 minutes.
- Flip the skewers once more and quickly apply marinade to the other side.
- Cook for a few seconds longer for the second side, then transfer to a serving platter.
- Give them one last basting with the reserved marinade before serving.
Notes
Consider using chicken thighs for more juiciness. Soak wooden skewers in water for 30 minutes to prevent burning.
