Method
Preparation
- In a small bowl, mix together the oil, sesame oil, minced garlic, minced ginger, dark soy sauce, and honey until well combined.
- Place the chopped chicken in a larger bowl and pour three-quarters of the marinade over it, ensuring it is fully coated. Cover and refrigerate for at least 1 hour.
- If using wooden skewers, soak them in water for about 30 minutes.
- Heat BBQ or griddle until very hot.
Assembly
- Thread the marinated chicken pieces onto the skewers, alternating with chunks of red bell pepper and onion.
- Discard any leftover marinade in the bowl.
Cooking
- Place the assembled skewers on the hot BBQ or griddle. Cook for about 8-10 minutes, turning them 3-4 times while grilling.
- Brush with the reserved marinade halfway through cooking.
- To ensure doneness, slice open the largest piece to ensure no pink remains.
Garnishing
- Once cooked, sprinkle the skewers with sesame seeds and torn coriander. Serve with a side of salad and rice or potatoes.
Notes
For deeper flavor, marinate the chicken overnight. You can add other vegetables like zucchini or cherry tomatoes for variety. Ensure not to move the skewers too much on the grill for perfect marks.
