Ingredients

For the Marinade
  • 1 tbsp oil (preferably avocado oil) Rich, creamy texture and health benefits.
  • 1 tbsp sesame oil Adds a nutty aroma.
  • 2 cloves garlic Peeled and minced.
  • 1 tsp minced ginger Provides a hint of spice.
  • 3 tbsp dark soy sauce Enhances the overall flavor.
  • 3 tbsp honey Sweetness that caramelizes when grilled.
For the Skewers
  • 2 chicken breasts approximately 350g/12.5 oz, chopped into bite-sized pieces For easy cooking and eating.
  • 1 red bell pepper chopped into large chunks Provides a sweet crunch.
  • 1 onion peeled and sliced into squares Adds a savory touch.
  • 1 tbsp sesame seeds For garnish.
  • 1 small bunch coriander/cilantro Roughly torn to freshen up the dish.

Method

Preparation
  1. In a small bowl, mix together the oil, sesame oil, minced garlic, minced ginger, dark soy sauce, and honey until well combined.
  2. Place the chopped chicken in a larger bowl and pour three-quarters of the marinade over it, ensuring it is fully coated. Cover and refrigerate for at least 1 hour.
  3. If using wooden skewers, soak them in water for about 30 minutes.
  4. Heat BBQ or griddle until very hot.
Assembly
  1. Thread the marinated chicken pieces onto the skewers, alternating with chunks of red bell pepper and onion.
  2. Discard any leftover marinade in the bowl.
Cooking
  1. Place the assembled skewers on the hot BBQ or griddle. Cook for about 8-10 minutes, turning them 3-4 times while grilling.
  2. Brush with the reserved marinade halfway through cooking.
  3. To ensure doneness, slice open the largest piece to ensure no pink remains.
Garnishing
  1. Once cooked, sprinkle the skewers with sesame seeds and torn coriander. Serve with a side of salad and rice or potatoes.

Notes

For deeper flavor, marinate the chicken overnight. You can add other vegetables like zucchini or cherry tomatoes for variety. Ensure not to move the skewers too much on the grill for perfect marks.
