Preparation
- Place the chicken in a single layer in the slow cooker. Sprinkle garlic powder, paprika, thyme, salt, and black pepper evenly over the chicken.
- Pour the remaining Buffalo Chicken ingredients around the chicken. Cook on LOW for 4 hours.
Cooking
- After 4 hours, carefully remove the chicken from the slow cooker and shred it into bite-sized pieces.
- Mix cornstarch with 2 tbsp of water in a small bowl. Add this slurry to the sauce after the chicken has been removed, and simmer on the sauté setting for about 5 minutes until thickened.
Assembly
- Split the rolls in half and lightly toast them, if desired.
- On the bottom half of each roll, add a layer of lettuce (if using), followed by a generous portion of the buffalo chicken. Place the top half of the roll on and serve warm.
- If you enjoy blue cheese, drizzle some sauce on top!
Notes
Using high-quality chicken breast will make a difference in taste. Experiment with different hot sauces for varying heat levels.
