  • ½ cup coconut sugar Offers a caramel-like flavor.
  • ¼ cup cocoa powder Adds a decadent chocolate taste.
  • ¼ cup unsweetened vanilla almond milk Helps bind the ingredients together.
  • 1 pinch sea salt Elevates flavors and enhances sweetness.
  • 1 teaspoon pure vanilla extract Enhances the overall sweetness.
  • 2 cups quick oats Provides a chewy texture.

Method

Preparation
  1. In a medium mixing bowl, combine the melted coconut oil and peanut butter, stirring until fully incorporated.
  2. Add in the coconut sugar, cocoa powder, almond milk, sea salt, and vanilla extract. Mix well until fully combined.
  3. If time permits, heat the peanut butter and cocoa mixture over medium-low heat for about 5-6 minutes to dissolve the coconut sugar completely.
Mixing and Forming
  1. In a large mixing bowl, add the quick oats and pour the peanut butter cocoa mixture over them, stirring until thoroughly combined.
  2. Using a small to medium cookie scoop, portion the dough onto a baking sheet lined with parchment paper, gently pressing down to form cookie shapes.
  3. Place the baking sheet in the fridge until the cookies are set, usually about 30 minutes. Once firm, serve and enjoy!

Notes

For extra flavor, consider adding mini chocolate chips or chopped nuts into the mixture. Wet your hands when shaping the cookies to avoid stickiness.
