Ingredients

Lima Bean Spread
  • 1 Cup Cooked Baby Lima Beans Provides a creamy and fluffy base for the spread.
  • 2 TB Nutritional Yeast Adds a nutty, cheesy flavor.
  • 2 TB Chopped Parsley Fresh and aromatic, adds brightness.
  • 1/2 Tsp Minced Garlic Infuses aroma and depth of flavor.
  • 1/2 Tsp Onion Powder Brings subtle sweetness.
  • 2 Tsp Fresh Lime Juice Adds brightness and zing.
  • 2 Tsp White Balsamic Vinegar Balances flavors with mild acidity.
Wraps
  • 2 Large Gluten-free Vegan Wraps Soft and pliable.
  • 1 Cup Raw Broccoli (sliced lengthwise) Adds crunch and vibrancy.
  • 2 Whole Hearts of Palm (sliced lengthwise) Tender and slightly sweet.

Method

Preparation
  1. In a food processor, combine all the ingredients for the lima bean spread. Pulse until creamy and thick, resembling a hummus texture. Taste and adjust seasoning if needed.
  2. Lay one wrap flat on a clean surface. Using a spatula, spread 1/3 cup (half) of the lima bean mixture across two-thirds of the wrap.
  3. Layer half of the sliced raw broccoli and one of the sliced hearts of palm on top of the spread.
  4. Carefully roll the wrap like a burrito, tucking in the ends as you go to keep everything inside.
  5. Heat a grill pan over high heat. Place the wrap seam side down and grill for about 2 minutes or until golden brown and slightly charred. Flip and repeat on the other side for another 2 minutes.
  6. Repeat for the second wrap.

Notes

For a smokier flavor, use a stovetop grill plate. You can add other veggies like spinach or sliced bell peppers for extra color and nutrients. Let your grill pan heat up properly for the best char without burning.
