Ingredients

For the Marinade
  • 1.5-2 pounds plump chicken breasts Choose high-quality, boneless skinless chicken breasts.
  • 1 cup fresh orange juice Provides sweet flavor depth.
  • 1 tablespoon orange zest Amplifies citrus essence.
  • 1 large lemon (juice and zest) Adds tangy freshness.
  • 2 large limes (juice and zest) Enhances the citrus flavor.
  • 4 cloves minced garlic Adds savory depth.
  • 2 finely chopped shallots Brings richness to the marinade.
  • 0.5 cup olive oil Creates a smooth marinade texture.
  • 2 tablespoons brown sugar Balances acidity with sweetness.
  • 0.5 teaspoon salt Enhances overall flavor.
  • 0.5 teaspoon black pepper Adds a flavorful kick.
  • 1 tablespoon fresh rosemary Provides an earthy layer.
  • 1 tablespoon dried parsley Adds herbal flavor.
  • 1 teaspoon red pepper flakes For a bit of heat.
For the Glaze
  • 2 tablespoons honey Adds gloss and sweetness.

Method

Preparation
  1. Zest and juice the oranges, lemon, and limes. In a medium bowl, combine these juices and zests with the minced garlic, shallots, olive oil, brown sugar, salt, pepper, rosemary, parsley, and red pepper flakes.
  2. Prepare the chicken breasts by lightly pounding or butterflying for even cooking. Coat the chicken with the marinade and set aside half for later glazing.
  3. Marinate the chicken for at least 30 minutes, preferably up to four hours, but do not exceed four hours to avoid mushiness.
Grilling
  1. Preheat the grill to medium-high heat, brushing the grates with a bit of oil.
  2. Grill the marinated chicken for 6-7 minutes on each side or until it reaches an internal temperature of 165°F.
  3. In the last minute, brush some reserved marinade glaze onto chicken for a beautiful finish.
Finishing
  1. Let the chicken rest briefly before slicing. To make the glaze, combine reserved marinade with honey and simmer in a saucepan for 5-6 minutes, then cool before application.

Notes

For a spicier kick, add more red pepper flakes or hot sauce to the marinade. Adjust sweetness with more or less brown sugar and honey. Experiment with fresh herbs for differing flavor profiles.
