Preparation
- Place the chicken thighs in a large bowl and sprinkle with garlic powder, onion powder, smoked paprika, kosher salt, and black pepper. Toss to coat and marinate in the fridge for 2 hours, or use them immediately.
Grilling
- Preheat the grill to medium heat and oil the grates to prevent sticking.
- Place the marinated chicken thighs on the grill, skin side down. Grill for about 7 minutes, being cautious of flare-ups.
- Flip the chicken over and grill for another 3 minutes, brushing with BBQ sauce on the side facing up.
- Cook for an additional 3 minutes.
- Flip again, apply more BBQ sauce, and cook for another 2 minutes.
- Flip one last time, brush with BBQ sauce, ensuring the skin side is facing up.
- Grill until the internal temperature of the chicken reaches 165°F, usually about 20 minutes total.
Notes
Rest the chicken for a few minutes after grilling to allow juices to redistribute before serving. Experiment with different BBQ sauces for varied flavors.
