  • 2 cups pineapple, cut into 1" cubes (fresh or frozen) Adds a sweet, tropical flair.
  • 1 cup red onion, cut into 1" pieces Brings a mild, sweet bite.
  • 3/4 cup barbecue sauce (divided) Rich and tangy to coat the chicken.

Method

Preparation
  1. Soak wooden skewers in water for 30 minutes before cooking to prevent burning.
  2. In a medium bowl, coat the chicken breast pieces with 1/2 cup of the barbecue sauce.
  3. Set aside the remaining 1/4 cup of barbecue sauce for brushing later.
  4. Place the pineapple and onion chunks in separate bowls for ease of assembly.
Skewering
  1. Assemble kabobs by alternating marinated chicken, pineapple, and onion chunks on soaked skewers.
Grilling
  1. Preheat the outdoor grill to about 400 degrees or use an indoor grill pan.
  2. Lightly spray the grilling surface with non-stick grilling spray.
  3. Place the assembled kabobs on the grill and cook for approximately 6-7 minutes on each side.
  4. Brush the remaining 1/4 cup of barbecue sauce over the kabobs after turning them.
  5. Remove kabobs from the grill once cooked through and serve immediately.

Notes

For enhanced flavor, marinate the chicken in barbecue sauce for a couple of hours before grilling. A stovetop grill pan works beautifully if outdoor grilling isn't possible. Feel free to add vegetables like bell peppers or cherry tomatoes for extra flavor.
