Ingredients
Method
Preparation
- Soak wooden skewers in water for 30 minutes before cooking to prevent burning.
- In a medium bowl, coat the chicken breast pieces with 1/2 cup of the barbecue sauce.
- Set aside the remaining 1/4 cup of barbecue sauce for brushing later.
- Place the pineapple and onion chunks in separate bowls for ease of assembly.
Skewering
- Assemble kabobs by alternating marinated chicken, pineapple, and onion chunks on soaked skewers.
Grilling
- Preheat the outdoor grill to about 400 degrees or use an indoor grill pan.
- Lightly spray the grilling surface with non-stick grilling spray.
- Place the assembled kabobs on the grill and cook for approximately 6-7 minutes on each side.
- Brush the remaining 1/4 cup of barbecue sauce over the kabobs after turning them.
- Remove kabobs from the grill once cooked through and serve immediately.
Notes
For enhanced flavor, marinate the chicken in barbecue sauce for a couple of hours before grilling. A stovetop grill pan works beautifully if outdoor grilling isn't possible. Feel free to add vegetables like bell peppers or cherry tomatoes for extra flavor.
