Ingredients
Method
Preparation
- Begin by unwrapping the cream cheese blocks and letting them sit at room temperature for two hours to soften.
- Allow the eggs and sour cream to warm up to room temperature.
Oven Preparation
- Preheat your oven to 400 degrees F (375 degrees F for dark pans) and move the top oven rack down to the second lowest position.
- Grease a 9-inch springform pan thoroughly.
Water Bath Setup
- Fill a roasting pan with hot water, about 1/4 full, to create a water bath.
- If necessary, wrap the outside of the springform with heavy-duty foil to prevent water from seeping in.
Mixing
- In a large bowl, add one block of softened cream cheese and beat until creamy. Gradually add the remaining blocks.
- Add the eggs one at a time, mixing on low speed after each addition.
- Melt the semisweet and bittersweet chocolate in a microwave-safe bowl until completely melted and let cool slightly.
- Mix the sugar, salt, and vanilla extract into the cream cheese mixture, then fold in the sour cream.
- Pour the cooled melted chocolate into the batter and mix until fully blended, then beat on high speed for seven minutes.
Baking
- Pour the batter into the prepared springform pan and place it in the water bath.
- Bake for 10 minutes at 400 degrees F, then reduce the oven temperature to 375 degrees F and bake for an additional 25-35 minutes.
Cooling
- Turn off the oven and leave the cheesecake inside with the door ajar for one hour.
- Transfer to a wire rack to cool completely before refrigerating overnight.
Serving
- Slice using a knife dipped in warm water, cleaning it after each cut.
- Serve plain or with fresh strawberries or whipped cream.
Notes
To enhance your cheesecake, ensure all dairy ingredients are softened. Try different brands of chocolate and serve with seasonal fruits or a drizzle of chocolate ganache.
