Method

Preparation of Sauces
  1. In a small saucepan over medium heat, combine the blueberries, optional liqueur, water, sugar, and lemon juice. Cook for about 6 to 8 minutes until the mixture thickens and becomes bubbly. Remove from heat and allow to cool completely.
  2. In the same manner, combine the raspberries, optional liqueur, water, sugar, and lemon juice in another small saucepan over medium heat. Cook for around 6 to 8 minutes, until thickened and bubbly. Remove from heat and let cool to room temperature.
Whip the Cream
  1. In the bowl of an electric mixer fitted with the whisk attachment, beat the chilled heavy cream until frothy. Gradually add the sugar and vanilla extract, continuing to beat until firm peaks form. Be careful not to overbeat.
Assemble the Eton Mess
  1. In individual serving glasses or dishes, spread a layer of whipped cream at the bottom. Add a layer of blueberry sauce, followed by a sprinkle of crushed meringue. Top with more whipped cream, then drizzle with raspberry sauce and finish with a layer of whipped cream.
  2. Finally, top with additional pieces of meringue and fresh berries for an irresistible presentation.
Serve
  1. You can enjoy the Eton Mess immediately or chill it for about 1-2 hours to enhance the flavors before serving.

Notes

For a more intense flavor, let the fruit sauces cool completely in the fridge before assembling the dessert. Taste your sauces after cooking to adjust sweetness if necessary. Consider using flavored meringues to add another layer of flavor and fun!
