  • 1 teaspoon Garlic Powder An extra punch of garlic.
  • 1 teaspoon Onion Powder Intensifies the onion flavor.
  • 1 teaspoon Dried Oregano Earthy and aromatic.
  • 1 teaspoon Smoked Paprika Provides a subtle smokiness.
  • 1 10-ounce can Red Enchilada Sauce A rich and zesty sauce.
  • ¼ cup Water To meld the flavors.
  • 1 cup Salsa Fresh and tangy.
  • 7 pieces Corn Tortillas (cut into 1-inch pieces) Adds texture and soaks up the sauce.
  • 1 15-ounce can Black Beans (rinsed & drained) Nutty and hearty.
  • 1 14-ounce can Corn Kernels (drained) Sweet and juicy.
  • 1½ cups Shredded Mexican Cheese Melting topping, can substitute with Colby Jack or Cheddar.

Method

Preparation
  1. Start by cutting the corn tortillas into 1-inch pieces. Dice the onion and grate the cheese if necessary. Open the cans of beans and corn, ensuring they are drained and ready for mixing.
Cooking
  1. In a large skillet, heat over medium-high heat. Brown the ground beef along with the diced onion, breaking up the meat as it cooks. Once the beef is no longer pink and the onions are soft, drain the excess fat.
  2. Lower the heat to medium and add the minced garlic. Sauté for about 30 seconds, stirring frequently to avoid burning.
  3. Sprinkle in the taco seasoning along with garlic powder, onion powder, oregano, and smoked paprika. Stir well to ensure the spices coat the beef mixture evenly.
  4. Add the enchilada sauce, water, and salsa to the skillet. Mix everything together until well combined.
  5. Toss in the corn tortilla pieces, ensuring that they’re fully coated in the sauce.
  6. Add the black beans and corn to the skillet. Stir everything well, then allow the mixture to come to a low simmer, letting all the flavors meld together.
  7. Once heated through, turn off the heat and sprinkle the shredded cheese over the top. Cover the skillet with a lid, allowing the cheese to melt.
Serving
  1. Dish up your Easy Beef Enchilada Skillet with your favorite toppings like fresh cilantro, sour cream, avocado slices, or extra salsa.

Notes

Customize flavors with jalapeños or different beans. A squeeze of lime juice can brighten flavors. Bake for a bubbly finish if needed.
