  • 1/4 Cup Parmesan or Cheddar Cheese Extra cheese for more flavor.

Method

Preparation
  1. Heat the Olive Oil: Bring 3 tablespoons of extra virgin olive oil to medium-low heat in a large, lidded saucepan.
  2. Sauté the Garlic: Add minced garlic once the oil is hot; stir for about 30 seconds until fragrant.
  3. Add the Ditalini Pasta: Stir the Ditalini pasta into the garlic for about 1 minute.
  4. Pour in Vegetable Broth: Add 3 cups of vegetable broth, along with salt and black pepper to taste. Cover and cook for 2 minutes.
  5. Stir and Cook Until Al Dente: Uncover and stir every 30 seconds until the pasta is al dente, following cooking time on the box.
  6. Adjust Liquidity: If needed, add additional broth for sauciness; skip for a drier dish.
  7. Create Creaminess: Off the heat, stir in cream (or milk), butter, and grated Parmesan until combined.
  8. Stir in Additional Ingredients: Mix in chili crisp, chickpeas, and extra cheese if desired.
  9. Garnish and Serve: Top with chopped parsley if desired, and serve warm.

Notes

For extra flavor, roast garlic until golden brown before adding pasta. To make it vegetarian, ensure the vegetable broth is certified vegetarian/vegan. You can also add cooked chicken or sautéed shrimp for extra protein. Experiment with different cheeses for a unique twist.
