  • 2 large Avocados (small diced) Choose ripe avocados for creaminess.
  • 1 large Cucumber (hot-house, diced) For a fresh crunch.
  • 2 cups Cherry Tomatoes (halved) Bright and juicy.
  • 4-5 tbsp Fresh Cilantro (chopped) Adds aromatic flavor.
  • 3 tbsp Lemon Juice (freshly squeezed) For zesty brightness.
  • 4 tbsp Olive Oil Provides a smooth base for the dressing.
  • 0.5 tsp Tabasco Sauce Adjust according to spice preference.
  • 0.5 units Jalapeno Seeds and stem removed, use cautiously.
  • 0.5 tsp Dried Oregano Or use 8-10 fresh leaves.
  • 0.5 tsp Salt Adjust to taste.
  • Black Pepper (freshly ground) To add depth of flavor.

Method

Cooking the Pasta
  1. Follow the package directions to boil your pasta until al dente. Once cooked, drain it well and set it aside to cool.
Preparing the Dressing
  1. In a food processor, combine olive oil, lemon juice, Tabasco sauce, jalapeno, oregano, salt, and black pepper. Process until the dressing is smooth and all ingredients are finely chopped.
Combining the Salad
  1. In a wide salad bowl, add the cooled pasta. Carefully mix in the avocado, diced hard-boiled eggs, tomatoes, and cucumber.
Dressing the Salad
  1. Pour the prepared dressing over the salad mixture, tossing gently to coat all ingredients evenly.
Taste and Adjust
  1. Before serving, taste the salad. Adjust with more salt, black pepper, or a dash of Tabasco if you prefer it spicier.
Serving
  1. Serve the salad immediately, or refrigerate for a bit before serving to let the flavors meld.

Notes

Consider adding crumbled feta or goat cheese for an extra layer of creaminess. You can also swap out the vegetables based on what you have on hand; bell peppers, radishes, or even corn can be delightful additions.
