  • 0.5 small White Onion, diced For sweetness and texture.
Dairy
  • 3 oz Feta Cheese, crumbled Adds a rich depth of flavor.
  • 5 large Eggs Binds all ingredients together.
  • 2/3 cup 2% Milk Lightens the quiche's texture.
  • 2 tbsp Parmesan Cheese, shredded For an additional layer of cheesiness.
Seasonings and Oil
  • 1 tsp Kosher Salt Enhances all flavors.
  • 0.5 tsp Black Pepper, freshly ground For a subtle kick.
  • 0.5 tbsp Olive Oil Used to sauté aromatics.
For Greasing
  • Butter or Non-Stick Spray For greasing the pie dish.

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease your favorite pie dish with butter or non-stick cooking spray and add a thin layer of shredded Parmesan cheese to the bottom.
Cooking
  1. In a large sauté pan over medium heat, add the olive oil. Once heated, stir in the minced garlic and diced onion. Sauté until the onion becomes translucent, about 3-4 minutes.
  2. Add the fresh spinach to the pan, mixing well with the garlic and onion. Sauté until the spinach is bright and wilted, around 2-3 minutes. Remove from heat and transfer to a bowl.
  3. In a separate large bowl, crack the five eggs and whisk them with the milk, salt, and pepper until fully combined.
  4. Crumble the feta cheese into the bowl with the cooked spinach and garlic mixture. Pour the egg mixture over it, mixing everything until evenly combined.
  5. Pour the combined mixture into your prepared pie dish.
  6. Bake in the preheated oven for about 50 minutes, or until the egg has fully set and the top is lightly golden.
  7. Allow to cool for a few minutes, then slice into wedges and serve warm.

Notes

For best results, use fresh spinach and feta. Feel free to customize flavors with herbs or experiment with different cheeses. This quiche can be made ahead and stored in the fridge for quick meals.
