Preparation
- Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper.
- In the bowl of your stand mixer fitted with the paddle attachment, combine the butter, light brown sugar, and granulated sugar. Mix on medium speed for about 3 minutes until light and fluffy.
- Incorporate the eggs, vanilla extract, baking soda, salt, and cornstarch. Mix for approximately 1 minute, scraping the sides of the bowl as necessary.
- Reduce mixer speed to low and gradually add the all-purpose flour until just combined. Stir in the milk chocolate chips gently.
- Portion out a rounded 1/3 cup (about 4.2 ounces) of cookie dough and roll it into a ball. Break this ball in half, turn it with the jagged edge facing up, and press it back together.
- Place the formed cookie dough balls on the prepared baking sheet, spaced about 3 inches apart, and bake 5 cookies at a time.
- Bake for 10 to 11 minutes, or until edges are slightly golden and tops are just beginning to set. Be cautious not to over-bake.
- Immediately after pulling them from the oven, press a few additional chocolate chips on top of the baked cookies.
- Allow cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
Notes
Use quality ingredients for superior flavor. Chill dough for about 30 minutes before baking for more flavor. Experiment with nuts or different chocolate types for variations.
