Method
Sauté Vegetables
- Heat the olive oil in a medium-large soup pot over medium heat.
- Add the diced onions, carrots, and celery to the pot. Stir and let the vegetables sauté until they are lightly softened and translucent, about 5 minutes.
Add Aromatics
- Incorporate the minced garlic, chili flakes, and fresh rosemary into the pot.
- Stir and cook until fragrant, about 30 seconds.
Combine Beans and Stock
- Add the drained and rinsed navy beans to the pot and mix well.
- Pour in the vegetable stock and stir once more. Bring the soup to a gentle boil.
Blend Half of the Soup
- Once the soup begins to boil, ladle half of it into an upright blender.
- Add the fresh lemon juice to the blender and blend until completely liquefied.
- Pour this blended mixture back into the pot.
Season the Soup
- Season the soup with sea salt and freshly ground black pepper to taste.
Add Kale
- Stir in the chopped lacinato kale and bring the soup back to a boil until the kale is slightly wilted and bright green.
- Check the seasoning one more time and adjust if necessary, then stir in the chopped parsley.
Serve Hot
- Serve your creamy white bean soup hot, garnished with additional parsley if desired.
Notes
For an extra layer of richness, add a splash of coconut milk or a dollop of yogurt before serving. Consider increasing chili flakes for more heat, or roasting garlic and onions for caramelized flavor.
