Ingredients

For the sauce
  • 1 cup oil Essential for frying and infusing flavor.
  • 1 teaspoon achiote powder Adds color and earthy flavor.
  • 1 15 oz can coconut milk Forms the heart of the sauce.
  • 1/4 cup chopped parsley Garnish for added flavor.
  • Salt to taste Salt Enhances all the dish’s flavors.
Main ingredients
  • 1 pound shrimp with shells Fresh shrimp for tender texture.
  • 3 pieces bell peppers Provides crunch and sweetness.
  • 1/2 piece onion, chopped Balances the flavors.
  • 3 cloves garlic Elevates the dish with depth.
  • 1 teaspoon oregano Herbal note complementing the shrimp.
  • 1 cup cooked rice Comforting base for the dish.

Method

Preparation
  1. Pour the oil into a pan over low heat. Add the achiote powder and stir it in. Turn off the heat after a minute, letting the mixture rest for about 20 minutes.
  2. While waiting, peel the shrimp, keeping the shells aside for later use.
  3. Return the shrimp shells to the infused oil and heat them until their color changes.
  4. Use a slotted spoon to remove the shells, leaving behind only the flavorful oil.
Cooking
  1. Add chopped onion and bell peppers to the pan. Cook them for about 5 to 8 minutes until the onion becomes soft and translucent.
  2. Add in the minced garlic and cook for another minute or until it becomes fragrant.
  3. Sprinkle salt and oregano into the pan.
  4. Add the shrimp next, cooking them for about 2 minutes on each side, allowing them to turn pink and tender.
  5. In a blender, combine the shrimp shells reserved earlier with the coconut milk, blending it until smooth.
  6. Strain the mixture through a fine mesh strainer and pour the resulting liquid back into the pan with vegetables and shrimp.
Serving
  1. Allow everything to simmer for a few minutes until fully heated.
  2. Serve over a bed of cooked rice and garnish with freshly chopped parsley.

Notes

For enhanced flavor, marinate the shrimp in garlic and a squeeze of lime juice for about 30 minutes before cooking. Use medium or large shrimp for better texture and juiciness. If desired, add diced jalapeños or red pepper flakes for heat. Serve with lime wedges for an extra burst of flavor.
