Method

Preparation
  1. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
  2. In a large bowl, beat the softened butter and granulated sugar on high speed until smooth and creamy, about 2 minutes.
  3. Add the egg and vanilla extract to the butter-sugar mixture, continuing to beat until fully combined, about 1 minute.
  4. Slowly add the dry ingredients to the wet mixture, mixing on low speed until just combined. If dough is too sticky, add 1 tablespoon of flour.
  5. Divide the dough into two parts, roll out each on dusted parchment to about 1/4-inch thickness, and refrigerate for 1-2 hours.
Baking
  1. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. Cut out cookies using your favorite cookie cutters and place them on the prepared sheets.
  3. Bake for 11-12 minutes or until edges are set. Cool on baking sheet for 5 minutes before transferring to a wire rack.
Decorating and Serving
  1. Once cookies are cool, decorate with royal icing or glaze and add sprinkles as desired.
  2. Enjoy the cookies or store them tightly to keep fresh.

Notes

For best flavor, use high-quality cocoa powder. Ensure butter and egg are at room temperature for optimal mixing. Chill the dough to maintain cookie shapes.
