Ingredients

Dry Ingredients
  • 2.5 cups all-purpose flour Fluffy and light, this flour is the backbone of your cookies, providing structure.
  • 2 teaspoons baking powder A crucial leavening agent, it helps your cookies rise to the perfect height.
  • 0.5 teaspoon salt Just a pinch of salt enhances the sweetness and balances flavors.
Wet Ingredients
  • 5 ounces unsweetened chocolate Opt for high-quality chocolate like Ghirardelli; it adds richness to your cookies.
  • 0.5 cup unsalted butter The creamy, buttery texture melds beautifully with the chocolate.
  • 1 teaspoon instant coffee or espresso powder This adds a depth of flavor, enhancing the chocolate taste; optional.
  • 4 large eggs Eggs bring moisture and act as a binding agent, giving the cookies a tender crumb.
  • 1 cup granulated sugar For that delightful sweetness, granulated sugar brings structure and crispness.
  • 1 cup dark brown sugar Adds richness and a slight chewy texture.
  • 2 teaspoons vanilla extract A splash of vanilla lends a warm, aromatic essence.
Coating
  • 1 cup confectioners' sugar Essential for the crinkle effect and a sugary coating that adds an irresistible aesthetic.

Method

Preparation
  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set it aside.
  2. In a small, microwave-safe bowl, combine the chopped chocolate and butter. Microwave in 20-second intervals, stirring in between until smooth.
  3. If using, add the instant coffee or espresso powder to the chocolate mixture and stir until fully combined.
  4. In a large bowl, whisk the eggs with both sugars and the vanilla extract until smooth. Fold in the melted chocolate mixture.
  5. Gradually add the flour mixture, whisking until evenly incorporated. Chill the batter covered in plastic wrap for at least 2 hours.
Baking
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Roll the chilled dough into 1½-inch balls and coat each in confectioners' sugar.
  3. Arrange 12 balls on each baking sheet, leaving space for spreading. Bake for 9 to 12 minutes.
  4. Allow cookies to cool on the baking sheets for a few minutes before transferring to a cooling rack.

Notes

Quality ingredients matter for flavor; chill the dough for proper texture; double coat in sugar for extra crinkle effect.
