Preparation and Marinating
- In a big bowl, combine all the marinade ingredients: dark brown sugar, white pepper, rice flour, salt, grated garlic, soy sauce, vinegar, and pineapple juice. Mix everything until well blended.
- Add the chicken fillets into the bowl, gently massaging the marinade into the meat for about a minute.
- Cover the bowl with plastic wrap and let it marinate for at least an hour; for optimal flavor, refrigerate for 24 hours or up to 3 days.
Cooking
- Place the marinated chicken pieces into a skillet or wok, adding in a cup of water. Simmer over medium-high heat, uncovered, for about 15-20 minutes until the liquid is reduced.
- Drizzle in the oil after the water has evaporated, continue cooking until the sauce thickens and darkens.
Serving
- Transfer the cooked Chicken Tocino to a serving dish and enjoy it alongside steamed rice and a spicy vinegar dip or fresh tomatoes.
Notes
Marinating overnight enhances flavors. Adjust vinegar and soy sauce as per your preference.
