Ingredients

For the Marinade
  • ¾ cup dark brown sugar Adds sweetness and caramelization.
  • ½ tablespoon finely ground white pepper Enhances flavor without overpowering.
  • 1 tablespoon rice flour Creates a crispy texture.
  • 1 tablespoon salt Season to taste.
  • 3 cloves garlic, grated Infuses the marinade with rich aroma.
  • 1 tablespoon soy sauce Provides savory depth.
  • 2 tablespoons vinegar Adds a tangy complement.
  • ½ cup unsweetened pineapple juice Optional; can substitute with water.
  • a few drops red food color Optional; for vibrant appearance.
For Cooking
  • 2 pounds skinless chicken thigh fillet, cut thinly Tender and juicy, absorbs marinade well.
  • 1 cup water Used to cook down the marinade and chicken.
  • 3 tablespoons oil Needed for frying.

Method

Preparation and Marinating
  1. In a big bowl, combine all the marinade ingredients: dark brown sugar, white pepper, rice flour, salt, grated garlic, soy sauce, vinegar, and pineapple juice. Mix everything until well blended.
  2. Add the chicken fillets into the bowl, gently massaging the marinade into the meat for about a minute.
  3. Cover the bowl with plastic wrap and let it marinate for at least an hour; for optimal flavor, refrigerate for 24 hours or up to 3 days.
Cooking
  1. Place the marinated chicken pieces into a skillet or wok, adding in a cup of water. Simmer over medium-high heat, uncovered, for about 15-20 minutes until the liquid is reduced.
  2. Drizzle in the oil after the water has evaporated, continue cooking until the sauce thickens and darkens.
Serving
  1. Transfer the cooked Chicken Tocino to a serving dish and enjoy it alongside steamed rice and a spicy vinegar dip or fresh tomatoes.

Notes

Marinating overnight enhances flavors. Adjust vinegar and soy sauce as per your preference.
