Ingredients

For the Chicken

  • 2 tablespoons taco seasoning A delightful blend that brings a wonderful aromatic essence, reminiscent of your favorite Mexican restaurant.
  • 2 cloves garlic (minced) Adds a punch of flavor and a fragrant aroma to the chicken.
  • 1 tablespoon olive oil For that lovely crispiness on the outside while keeping the chicken moist inside.
For the Wraps
  • 8 leaves Romaine Lettuce (rinsed) Crispy and refreshing, these lettuce leaves act as the perfect, crunchy wrap.
  • 1 medium avocado (diced) Creamy and rich, avocado complements the spices and adds a delightful texture.
  • 1 medium tomato (diced) Juicy and sweet, tomatoes bring a burst of freshness.
  • 1/4 cup onion (diced) Adds a sharp crunch and complements the flavors brilliantly.
  • 1/2 cup loosely packed cilantro Fresh cilantro elevates the dish with its aromatic qualities.
  • 1/2 cup Greek Yogurt (or sour cream or mayo) Offers a creamy, tangy drizzle that binds all the ingredients together.
For the Cilantro Sauce
  • 2 tablespoons olive oil For the cilantro sauce, ensuring it drizzles perfectly over the wraps.
  • 1 clove garlic (minced) Enhances the flavors in the cilantro sauce.
  • 1/2 medium lime (juiced) Provides freshness and zing to the sauce.
  • 1 pinch salt Balances the flavors.
Optional Ingredients
  • 1 medium jalapeno (optional) For those who enjoy a kick of spice.

Method

Marinate the Chicken
  1. In a large bowl or zip-seal bag, combine the chicken, minced garlic, olive oil, and taco seasoning. Ensure the chicken is well-coated. Cover and refrigerate for at least 15-30 minutes or, for best results, up to 24 hours.
Grill the Chicken
  1. Preheat your grill or pan to medium-high heat. Remove the chicken from the fridge and discard the marinade. Cook the chicken on the grill until it’s no longer pink on the inside, about 9-10 minutes per side.
Prepare the Cilantro Sauce
  1. In a food processor, combine Greek yogurt (or sour cream), olive oil, minced garlic, lime juice, salt, and cilantro. Blend for about a minute until creamy and smooth.
Assemble the Wraps
  1. Let the chicken rest for a few minutes before slicing it into strips. Prepare your lettuce wraps by washing and drying the Romaine leaves. Layer each lettuce leaf with strips of grilled chicken, diced tomatoes, onions, and avocado.
Garnish and Serve
  1. Drizzle the cilantro sauce over the assembled wraps or serve it on the side for dipping. Add sliced jalapeno on top if desired.

Notes

For deeper flavor, marinating the chicken overnight can enhance taste. Consider adding shredded cheese for a creamier texture without compromising keto. You can also replace chicken with chickpeas or grilled vegetables for a vegetarian version. Pre-cook chicken in bulk for quick meals during the week.
