Preparation of Syurp
- In a medium-sized pan, combine the blueberries, fresh mint leaves, honey, and still water. Bring the mixture to a boil over medium heat.
- Once boiling, reduce the heat to a very light simmer. Stir gently to combine the ingredients, allowing the blueberries to burst and release their juices.
- Cook the mixture for about 15 minutes. If some stubborn blueberries resist bursting, use a wooden spoon to press them against the sides of the pan to release their flavor.
- After 15 minutes, remove the pan from the heat. Pour the blueberry syrup through a fine mesh sieve into a bowl or jug, pressing the syrup through the sieve to leave behind the blueberry skins and mint leaves. Set the syrup aside to cool for approximately 20 minutes.
Serving
- Once cooled, take your serving glasses and pour approximately half an inch of the blueberry syrup into each glass.
- Add ice cubes to the glasses, then top them off with sparkling water, giving a slight stir to mix.
- Garnish with frozen berries and fresh mint leaves for a beautiful presentation. Enjoy your refreshing Blueberry Mocktail!
Notes
Use fresh, high-quality blueberries for the best flavor. Adjust sweetness by varying honey as per taste. Muddle mint leaves for a stronger flavor if desired.
