Preparation
- Line a large tray with parchment paper and set it aside.
- In a food processor, grind the Biscoff cookies until they become extremely fine.
Filling
- Pour the cookie crumbs into a large bowl and combine with the cream cheese and Biscoff cookie butter.
- Mix by hand or pulse in the food processor until a soft dough forms.
Shaping
- Scoop out portions of the mixture and roll them into smooth balls.
Chilling
- Place the truffle balls onto the parchment-lined tray and chill in the freezer for about 15 minutes.
Coating
- Melt the white chocolate with 2 tablespoons of Biscoff cookie butter until smooth.
- Once melted, dip each truffle ball into the chocolate and coat thoroughly.
- Place the coated truffles back onto the tray.
Decorating
- Sprinkle additional cookie crumbs over the top of the truffles while the chocolate is still wet.
Notes
Ensure your cream cheese is at room temperature for easier mixing. Consider incorporating a teaspoon of Biscoff spread for a more intense cookie flavor. Avoid overheating chocolate by stirring frequently.
